Recipe: Relaxing Mint Chocolate Collagen Cookies

These cookies remind me of chocolate shortbread. You can eat them raw or cooked depending on if you want to turn on your oven. I love them frozen raw and dipped in chocolate like these ones. You can also bake them and crumble them on top of the chocolate mint pudding popsicles.

Makes about 12


  • 1/4 cup melted coconut oil
  • 1 cup almond flour
  • 1 cup of coconut flakes
  • 1 scoop of EVOLUTION_18 Relaxing Mint Chocolate
  • 1 Tbsp. cacao powder
  • 1 drop of peppermint oil or 1/4 tsp. of peppermint extract, optional
  • 1/16 tsp. salt
  • 1–2 Tbsp. maple syrup or honey


  1. Preheat the oven to 350 Fahrenheit, if baking.

  2. Put all the ingredients in a food processor and process for about one minute until it starts to come together and pull away from the sides.

  3. Form into little balls (about 1 tablespoon each) and then press into a patty shape. If keeping raw, store in the freezer and optionally dip into chocolate like these.

  4. Bake for about 10 minutes. Store in the freezer for up to three months.

  5. Defrost on the counter for about 10 to 15 minutes.
