Recipe: EVOLUTION_18 Cookie Granola

Top your smoothies or yogurt with this crunchy homemade granola. It is also delicious with fresh fruit, or eaten straight up out of the jar!
2 cups of oats, like Bob’s Red Mill thick-cut
1/4 cup olive oil
1 tbsp. honey or maple syrup
2 egg whites, beaten until frothy like cappuccino foam
1 scoop EVOLUTION_18 Relaxing Vanilla
- Pinch of salt
Preheat oven to 375 degrees Fahrenheit.
On a parchment lined rimmed baking sheet, add all the ingredients and mix with a spatula into incorporated and then smooth out into an even layer.
Bake 20-25 minutes until light caramel brown. Then carefully break up the clusters so you have large “cookie” chunks.
- Store in an airtight container up to one week. Makes about 2-1/2 cups.
