Recipe: Probiotic Cashew Yogurt Chia Pudding

What if making your own dairy-free yogurt was as easy as blending a smoothie? You're in luck. This recipe is super easy to make and packed with probiotics. Top this yogurt with your favorite toppings like grain-free granola or fruit.

Cashew Yogurt

Serves two

Ingredients:

  • 1/2 cup raw cashews, soaked overnight in filtered water*
  • 1 lemon, juiced about 2 tbsp.
  • 1/2 cup plant-based milk*
  • 2 packs of EVOLUTION_18 Probiotic Quick Melt
  • Zest of 1 lemon, optional garnish

Directions:

  1. Put the cashews in an airtight container with enough room to cover them with 1 cup of filtered water. Place on the counter or in the fridge overnight for up to 24 hours. For the fast version, soak for at least 30 minutes.

  2. Rinse the cashews, and then place into a high-speed blender. Add lemon juice, plant-based milk, and probiotic melts. Blend on low for 30 seconds, and then high for one minute or until smooth and creamy. It’s like a thinner yogurt consistency.

  3. Pour into two containers and top with toppings of your choice like fresh fruit or grain-free granola and lemon zest.

Lasts up to three days in the fridge.

You can also make a delicious chia pudding using this yogurt. Make this the night before and just toss in your bag in the morning.

Chia Pudding

Serves 2

Ingredients:

  • 1 Cashew Yogurt recipe
  • 2 tbsp. chia seeds
  • Zest of 1 lemon, optional garnish

Directions:

  1. Mix in the chia seeds in a small bowl. Pour into two containers and let set in the fridge at least four hours or over overnight.
  2. Top with toppings of your choice like fresh fruit or grain-free granola and lemon zest.

Lasts up to three days in the fridge.
