Recipe: Sanza's Kitchen Collagen Banana Bread

For the Bread

  • 1 scoop EVOLUTION_18 Relaxing Vanilla
  • 1 cup Gluten-free flour
  • 3 Bananas
  • 1 cup Unsweetened applesauce
  • 1 Date
  • 1 1/2 tsp of aluminum-free baking powder
  • 1/2 tsp pumpkin spice mixture, or cinnamon
  • 1/4 cup Chocolate Chips
  • a pinch of Himalayan pink salt
  • 1 tsp Apple cider vinegar

For the Vanilla Caramel


  1. Preheat the oven to 356º Fahrenheit.

  2. Prepare the Vanilla Caramel first. Place all the ingredients in a high-speed blender, and blend until you have a smooth consistency. Save in the fridge.

  3. In a high-speed blender blend the applesauce and the date.

  4. In a big mixing bowl smash the bananas until it almost has the same consistency as the apple sauce.

  5. Put the rest of the ingredients in the bowl and mix until well combined.

  6. Transfer the dough to a loaf tin. I recommend using a good quality silicone BPA-free mold. It makes the process of taking the bread out of the mold much easier.

  7. Bake for 45 min.

  8. After that check every 5 minutes if it is baked inside with a wooden stick. If it comes out wet, leave it for 5 more minutes. Repeat the process until it comes out dry.

  9. Let cool completely. Once cooled, cover with the Vanilla Caramel and decorate with chocolate nibs, or coconut shreds if wanted.
