Chef Alex Thomopoulos Makes Us a Collagen-Packed Smoothie Bowl
I first met stand-up comedian turned chef Alex Thomopoulos while she was filming a cooking show in my studio in Montclair, New Jersey — and I was even a guest on the show. She's incredibly talented. She is all about wholesome, healthy and flavorful (she's Greek and Italian) food. And was way ahead of her time in terms of using healthy ingredients. Everything she makes is light, bright and delicious. We recently got together and chatted about all things cooking and wellness, check out the video below.
Of course, we also asked her for her go-to a smoothie bowl recipe. This one combines EVOLUTION_18 Overnight Vanilla collagen powder with antioxidant-rich blue majik. Blue majik, a blue-green algae, is derived from spirulina. It's super high in vitamins and is a great anti-inflammatory.
- 1/2 scoop EVOLUTION_18 Overnight Vanilla
- 2 tsp Blue Majik powder
- 1/2 frozen banana
- 1 cup frozen pineapple
- 1/4 cup unsweetened almond milk
- 2 tsp chia seeds
- Berries, granola and fresh mint to top
Blend together until smoothe. Top with fresh berries, granola and mint leaves.
